Pips Cider - Boar Chops with Cider Ingredients

  1. 2 boar chops (or pork loin chops)
  2. 1 small bulb of garlic
  3. a little oil for frying
  4. 100ml dry cider
  5. 1 tablespoon wholegrain mustard
  6. 50ml double cream
  7. a dessertspoon chopped flat leaf parsley
  8. salt and pepper
  9. 1 sprig of thyme
  10. 1 bay leaf
  1. Heat the oven to 200c and warm an oven dish.
  2. Season the chops on each side.
  3. Crush the garlic but no need to peel.
  4. Heat a little oil in a frying pan.
  5. Brown the chops for a few minutes on each side.
  6. Add the garlic whilst cooking the chops.
  7. Place the browned chops and garlic into the oven dish.
  8. Add the thyme and bay leaf.
  9. De-glaze the frying pan with the cider and reduce by half.
  10. Pour over the chops.
  11. Place in the oven and roast for 15-20 minutes.
  12. Check at half time and baste if necessary.
  13. The chops should be cooked through but still moist.
  14. Set the chops aside and keep warm.
  15. Strain the juices into a pan and bring to a simmer.
  16. Add the mustard, cream and stir.
  17. Reduce further if necessary.
  18. Finally add the chopped parsley and pour the sauce over the chops.
  19. Serve with mashed or new potatoes and leafy greens.
